Bill Zimnoch, resident district manager for Loyola University for Parkhurst Dining Services says students opt for the many variations of eggs, bacon and cheese in a bagel, English muffin, croissant, or burrito. "It's still a breakfast but you put it between bread," he says. "If they can grab it and go they are very happy."
The sandwiches range from $2.29 to $2.99. Even though purchasing a meal is as easy as swiping their meal card, students are aware of the prices and they do seek value meals. "They are more savvy now because families eat out more than they have food at home," Zimnoch says. "They sit in restaurants and they know this meal should cost this."
