By now most college students have about a month of classes under their belts, but they might also have something else starting to gather there-the dreaded Freshman 15.
But do they have to pack on those 15 pounds sometimes associated with the first year of college? Well, the good news is that college campuses have come a long way toward offering healthy options to students and really these days the Freshman 15 could just be a thing of the past.
At a last minute meeting to review the menu recently, the roasted port loin with locally grown apples to the chicken Caesar wraps to the banana cupcakes, it was all hands on deck from the head chef to the pastry chef. A fancy restaurant you say?
No, it's a college dining hall. This is Cedar Crest College in Allentown with food brought to the students by the staff of Parkhurst Dining. They emphasize healthy choices and locally grown fruits and vegetables.
Dean Piacentini, general manager of Parkhurst Dining, says his staff looks at details like making croutons from scratch instead of buying packaged ones.
"Our chef definitely plans out the menu ahead of time," he says. "We look at locally grown foods, what's in season and we go with those foods."
The options here get the nod from students and staff like the college's Assistant Athletic Director Sarah Wolcott.
