Parkhurst Unveils Dining Renovations, Healthier Changes at Saint Francis University

Saint Francis University President, Father Gabriel Zeis, TOR, served as master of ceremonies during the grand re-opening celebration of the newly renovated Torvian Dining Hall on January 23, 2013. In addition to a new look, healthier foods were also promoted, including A Flash Fitness station which featured turkey meatloaf with an orange sauce, couscous and grilled vegetables. Food items like this will now be offered daily. According to Leo Cavanaugh, Parkhurst Dining general manager, "We are happy to help educate our students on selecting food items that are healthier, contributing to the overall health and wellness for them on campus." The celebration coincided with an entertaining Traveling Chefs event, a Parkhurst Dining promotion where executive chefs prepared healthy and fresh foods to order and in front of guests using authentic ingredients and food preparation techniques indicative of Southeast Asia. Chefs provided a culinary "education" as they described the fresh ingredients used to prepare the selections, and also made recommendations if guests asked for complimentary flavors.

Under the direction of Terry McMullen, executive chef at Saint Francis University, Chefs Armando Balderas and Steven Gill from Saint Francis, as well as "visiting" chefs from other Parkhurst-managed, and AICUP member, schools including Lycoming College, Bucknell University and Chatham University, prepared the meals for the grand opening.
