Colleges and universities have found it more economical to hire companies to handle their food service operations.

Parkhurst Dining, a division of Eat'n Park Hospitality Group in Homestead, serves 22 college and university campuses in five states. They include Robert Morris University, two Chatham University campuses, Washington & Jefferson College and St. Vincent College.

Higher education clients account for about 75 percent of Parkhurst's business, said company spokeswoman Grace Zarnas-Hoyer. Parkhurst, which does not disclose its earnings, also has clients in business dining and cultural institutions, such as Carnegie Museums of Pittsburgh.
