Saint Francis Grand Opening of Dining Hall Unveils Healthy Dining Options; Live Chef Demo

WHAT:Saint Francis University President, Father Gabriel Zeis, TOR, will serve as master of ceremonies during the grand re-opening celebration of the newly renovated Torvian Dining Hall. In addition to a new look, healthier foods will also be promoted, including A Flash Fitness station which features turkey meatloaf with an orange sauce, couscous and grilled vegetables. Food items like this will now be offered daily. According to Leo Cavanaugh, Parkhurst Dining general manager, “We are happy to help educate our students on selecting food items that are healthier, contributing to the overall health and wellness for them on campus.”

The celebration will coincide with an entertaining Traveling Chefs event, a Parkhurst Dining promotion where executive chefs prepare healthy and fresh foods to order and in front of guests using authentic ingredients and food preparation techniques indicative of Southeast Asia. Chefs provide a culinary “education” as they describe the fresh ingredients and local agriculture used to prepare the selections, and will also make recommendations if guests ask for complimentary flavors.

Under the direction of Terry McMullen, executive chef at Saint Francis University, Chefs Armando Balderas and Steven Gill from Saint Francis, as well as “visiting” chefs from other Parkhurst-managed schools including Lycoming College, Bucknell University and Chatham University, will prepare the following recipes:

  • Bulgogi, A spicy pork Korean dish
  • Margarita salad (one with chicken and one vegetarian option)
  • Bun Chay, rice noodles with stir fry vegetables
