WHAT:Parkhurst Dining chefs will sponsor a live chef demo for Philadelphia University (PhilaU) students through Traveling Chefs, a promotion that touts the culinary talents of several chefs from Parkhurst who travel from area colleges to prepare global foods from Asia and the Mediterranean with gluten-free cooking ingredients and applications.
Gluten free options were first offered at PhilaU several years ago to accommodate the nutritional requirements of a student who had celiac disease. “Our goal was to make this student feel comfortable and not feel left out when she came into the café. At that time there were not many gluten-free products as there are now. So, we eliminated flour and replaced it with corn starch in everything we prepare,” said Gerald Hunter, executive chef at PhilaU.
Today, PhilaU offers gluten-free alternatives to just about everything. “Preparing with gluten-free applications is not just for the individual who has an allergy. It’s a healthier lifestyle that we support for the overall health and wellness of our students, faculty and staff,” said Hunter.
Chefs will also provide a culinary education as they describe the authentic ingredients used to prepare the selections, and will also make recommendations if guests ask for complementary flavors.
Students, faculty and staff can enjoy the following gluten-free menu items:
- Falafel with a lime-yogurt dressing served with a spicy carrot and golden raisin salad
- Jerk chicken and papaya salad with butter lettuce and cilantro pesto
- Crab and cucumber sushi roll served with sweet soy sauce
- Micro greens and wasabi dressing
