Recipe of the Month: Tempura Fried Korean Deviled Eggs

Chef Wallace Stafford, Executive Sous Chef at Ursinus College, says there’s a reason why he loves deviled eggs.

“Deviled eggs are one of my favorite holiday dishes because it is the safest thing to eat at a stranger’s house party,” says Stafford. “No matter what can go wrong in the kitchen, the deviled eggs are always acceptable. Burgers can be overcooked, hot dogs burnt, and beer warm, but you’ll never find an inedible deviled egg.”

Plus, deviled eggs have a built-in time limit to tell you when to stop eating.   

“When there is one last deviled egg on the tray, they’ve probably been out for too long.”
