30 Years of Growth: How Innovation and Evolution Have Shaped Parkhurst Dining

This year, as we celebrate our 30th anniversary, we can’t help but take a moment to reflect on the key milestones and innovations that allowed Parkhurst Dining to evolve over the years into a leading hospitality partner. During the past three decades, we focused on maintaining our chef-driven roots, growing with our clients and adapting to meet their needs, integrating new technology, exploring industry trends, and prioritizing sustainability efforts, all without losing sight of what matters most: people, partnerships, and great food.  

Creating a Culture that Encourages Innovation 

Innovation at Parkhurst did not begin with technology. It began with a different way of thinking about dining. When Parkhurst was founded in 1996, the company was built around a chef-driven model, empowering culinary professionals to lead programs, create experiences, and bring creativity directly to our guests. That philosophy led to innovations like the formation of the Culinary Council in 2000 and the launch of FarmSource® in 2002, both designed to strengthen culinary excellence, collaboration, and local sourcing.  

Jamie Moore, Director of Sourcing and Sustainability, played an integral role in the creation of the FarmSource® program.  

“To find the smaller food producers, we took a booth at the Pennsylvania Association for Sustainable Agriculture conference. I handed out cards that said, ‘If you are interested in moving local food, contact Jamie Moore.’ Thus, the FarmSource® local purchasing program was born.” 

Additionally, Parkhurst has developed a variety of programs to create opportunities for team members to share ideas, collaborate, learn from one another, and scale successful concepts across the company. For example, our annual chef retreat, Camp’n Cook; vendor tours that connect our teams with food and supplier partners to explore new products, trends, ingredients, and culinary innovations; Higher Education Summits for leaders and operators to share best practices, learn new tools and programs, align on key initiatives, and strengthen the campus dining experience; and the new Launchpad platform, an innovation ecosystem that helps our internal teams surface ideas, share successes, recognize innovation, and scale proven solutions. 

Over the years, it became evident that innovation thrives when people at every level of the company are given the autonomy, support, and resources to experiment and create improvements. By empowering our team members to think differently and create solutions, we can enhance the overall experience for guests and our teams.  

Embracing Expansion and Opportunities for Change  

As Parkhurst continued to grow beyond Pennsylvania, we entered new markets in Ohio, Maryland, Indiana, New England, Michigan, Kentucky, and beyond. This physical growth was paired with a commitment to customization and partnership rather than a one-size-fits-all approach. With each expansion came new opportunities to learn, evolve, and serve the community in different ways. Rather than simply replicating programs, Parkhurst has consistently adapted its dining experiences to reflect the cultures, priorities, and goals of each campus and workplace.  

As we expanded into new markets and communities, we also adapted to meet the changing needs of our clients and guests. This involved incorporating mobile ordering and convenience-driven dining solutions, frictionless retail experiences like Amazon Just Walk Out® markets at Lafayette College and Loyola University Maryland, Gear Stores that transform traditional campus bookstores into multi-purpose retail destinations, and expanded dietary accommodations and customized dining programs that reflect today’s diverse guest populations. 

Implementing such programs over the years required flexibility, curiosity, and a willingness to evolve alongside the communities we serve. It is not about chasing trends, but rather creating solutions that make life easier, dining more enjoyable, and partnerships stronger. 

Innovation Beyond Technology 

Some of Parkhurst’s most meaningful innovations have focused on sustainability, people, and partnerships. In addition to our FarmSource® program, sustainability initiatives such as our reusable container programs, Fill it Forward partnerships, and campus sustainability collaborations have continued to make an impact while aligning with the values of the communities we serve.  

Our response during the COVID-19 pandemic further demonstrated how innovation can take the form of adaptability and service. Through partnerships with community organizations, Parkhurst helped provide more than 1.5 million meals while also becoming the first contract dining provider in North America to achieve NSF CHECKED™ Phase 1 & 2 certification.  

From our experience, we have found that innovation is not limited to implementing new products or technology. It is about finding better ways to serve people and strengthen communities.  

Looking Ahead to the Future 

Embracing new innovations, expanding into new markets, adapting to meet the needs of our guests, and remaining true to our founding values are all key elements that have played a strong part in shaping our company over the past 30 years, and they will continue to play a role in shaping our future endeavors. It is our people, partnerships, and passion for food that pave our way as we look forward to our next 30 years and beyond!
