Last year, in Bytes & Bites, we introduced our perspective on AI as a growing presence in foodservice, grounded in a belief that remains unchanged: technology should never replace the heart of hospitality. What has evolved, however, is the environment in which that belief lives and the opportunities to uphold it in new, more dynamic ways.
Today’s foodservice landscape demands a more nuanced approach. Operators are navigating fluctuating costs, supply chain volatility, and rising expectations for personalization, wellness, and sustainability. Kitchens are being asked to do more, with greater speed, precision, and intention, while still delivering experiences that feel warm, local, and human.
This is where AI, when used thoughtfully, earns its place.

Across the industry, AI-powered platforms are enhancing how teams operate: managing inventory, streamlining feedback analysis, identifying seasonal opportunities, and supporting more efficient kitchen workflows. These tools can surface insights faster than ever before, but insight alone doesn’t create a meaningful dining experience. Taste, texture, and tradition aren’t found in data, but rather they’re built over time through experience and care.

When manual processes are simplified, our teams gain the capacity to focus on higher-impact work, like driving creativity, solving challenges proactively, and deepening relationships. The result is more intentional menus, clearer communication, and dining experiences that evolve in step with the communities we serve.
Importantly, AI at Parkhurst is never one-size-fits-all. Every location has its own rhythms, preferences, and priorities. While technology informs decision-making, it is local insight that ultimately guides it. Progress, with Intention
